HACCP process: from the food safety plan to CCP monitoring and deviation

The HACCP system as four linked flowcharts: the plan that produces the CCPs, CCP monitoring at the line, the CCP deviation response and nonconforming food product disposition, with allergen, label and temperature controls alongside.

HACCP food safety is the plan and the three procedures behind it: a hazard analysis that decides which steps are critical control points, the scheduled readings that prove each CCP is within its limit, the response when a reading is not, and the disposition of product made while it was not. This family orders those four in sequence and adds the standing controls run beside them: allergen management, label verification and temperature excursion.

The plan comes first: the HACCP flowchart corrects the process diagram against the line as it runs, works the hazard analysis and the CCP decision tree, and sets limits only for the CCPs that decision produced. CCP monitoring operates them: the operator records the reading, judges it against the limit, and on a breach stops the line, segregates the product and hands off to CCP deviation. Deviation holds the product by lot code, decides between release, rework gated on a validated kill step, or destruction, and verifies the CCP is back in control before the line resumes. Condemned product goes through nonconforming food product: quarantine, a food-safety decision, a four-way disposition and CAPA.

Two loops run independently of any single reading: a calibration check that sends every reading an out-of-date instrument produced back into reassessment, and a revalidation trigger that reviews the plan on a real change. Allergen management is the hinge of the standing controls: a declaration check at goods-in, segregated storage, and the decision whether the line's previous product carried a different allergen, which sends the run through changeover and cleaning verification or straight to the label check. Label verification checks the allergen statement against the current recipe before setup, and temperature excursion sizes a cold-chain failure against the product's own shelf-life data.

The library has no food-specific CAPA template: the corrective action the deviation and nonconforming product processes end in is the generic nonconformance to CAPA family. Pest control, a master sanitation schedule beyond CIP, and environmental swabbing for a food plant have no template at all. The changeover and cleaning the allergen decision triggers are drawn in full under food production, and a deviation that reaches product already shipped becomes a recall under food supply and traceability.
